- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella balls (bocconcini or ciliegine)
- 1 cup fresh basil leaves, chopped
- 2 tbsp balsamic glaze
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente, about 3-5 minutes. Drain and set aside.
- Prepare the Vegetables: While the tortellini cooks, halve the cherry tomatoes on a cutting board.
- Mix It Up: In a large mixing bowl, combine the cooked tortellini, halved cherry tomatoes, mozzarella balls, and chopped basil. Toss gently to combine.
- Dress It Right: Drizzle olive oil and balsamic glaze over the mixture. Season with salt and pepper to taste. Toss again until everything is well-coated.
