Ingredients

  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella balls (bocconcini or ciliegine)
  • 1 cup fresh basil leaves, chopped
  • 2 tbsp balsamic glaze
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente, about 3-5 minutes. Drain and set aside.
  2. Prepare the Vegetables: While the tortellini cooks, halve the cherry tomatoes on a cutting board.
  3. Mix It Up: In a large mixing bowl, combine the cooked tortellini, halved cherry tomatoes, mozzarella balls, and chopped basil. Toss gently to combine.
