- 3–4 boneless, skinless chicken breasts
- 1 cup buffalo sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup fresh or frozen corn
- 2 fresh bell peppers, chopped (red and green)
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
Instructions
- Prepare Your Ingredients: Chop the bell peppers, mince the garlic, and dice the onion. Set aside.
- Sauté Aromatics: In a skillet over medium heat, sauté the diced onion and minced garlic until fragrant and golden (about five minutes).
