- 1 lb ground chicken
- 2 tbsp harissa paste
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 1 cup fine couscous
- 1 cup water
- 1 medium cucumber, diced
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 1/2 cup Greek yogurt
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground chicken, harissa paste, salt, pepper, parsley, and mint. Mix thoroughly using your hands.
- Shape the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
- Bake for about 20 minutes or until cooked through and golden brown.
- While the meatballs are baking, bring water to a boil in a small pot.
- Add couscous to boiling water, remove from heat, cover, and let sit for about 5 minutes. Fluff with a fork.
- In a bowl, combine diced cucumber with parsley and mint.
- For the dressing, mix Greek yogurt with salt to taste and drizzle over the salad before serving.
