Description

Experience a burst of flavors with spicy harissa chicken meatballs served on a fluffy bed of couscous, topped with a refreshing cucumber herb salad.


Ingredients

  • 1 lb ground chicken
  • 2 tbsp harissa paste
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1 cup fine couscous
  • 1 cup water
  • 1 medium cucumber, diced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1/2 cup Greek yogurt
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, harissa paste, salt, pepper, parsley, and mint. Mix thoroughly using your hands.
  3. Shape the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  4. Bake for about 20 minutes or until cooked through and golden brown.
  5. While the meatballs are baking, bring water to a boil in a small pot.
  6. Add couscous to boiling water, remove from heat, cover, and let sit for about 5 minutes. Fluff with a fork.
  7. In a bowl, combine diced cucumber with parsley and mint.
  8. For the dressing, mix Greek yogurt with salt to taste and drizzle over the salad before serving.
