Ingredients

  • 1 cup pimento cheese
  • 16 large green olives
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup seasoned breadcrumbs
  • Vegetable oil (for frying, approx. 2 cups)

Instructions

  1. Using a small spoon or piping bag, generously stuff each green olive with pimento cheese. Set aside.
  2. In three separate bowls, place all-purpose flour, beaten eggs, and seasoned breadcrumbs.
  3. Roll each stuffed olive in flour until fully coated.
  4. Dip into beaten eggs, allowing excess to drip off.
  5. Finally, roll in seasoned breadcrumbs until evenly covered.
  6. In a large skillet or deep fryer, heat vegetable oil to approximately 350°F (175°C).
  7. Carefully add several coated olives to the hot oil without overcrowding.
  8. Fry for about 3-4 minutes or until golden brown and crispy.
  9. Use a slotted spoon to transfer fried olives onto paper towels to drain excess oil.
