Description

Delight in these Pecan Pie Cookie Cups featuring a buttery cookie shell filled with rich, gooey pecan pie filling—an irresistible treat perfect for any occasion!

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup toasted pecans, roughly chopped
  • 1/2 cup maple syrup
  • Pinch of salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a muffin tin with nonstick cooking spray.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Add the egg and vanilla extract; mix until fully incorporated. Gradually stir in flour until combined—be careful not to overmix.
  4. Scoop about a tablespoon of dough into each muffin cup. Press down gently in the center to create an indentation.
  5. In another bowl, combine chopped pecans with maple syrup and a pinch of salt (if using). Spoon this mixture into each cookie cup until nearly full.
  6. Bake for about 15-18 minutes or until golden brown around the edges. The centers should remain slightly soft.
  7. Allow cooling in the muffin tin for five minutes before transferring to a wire rack.
