- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 325°F (160°C). Line a mini muffin pan with paper liners or spray with nonstick cooking spray.
- In a medium bowl, combine graham cracker crumbs and melted butter until it resembles wet sand.
- Spoon one tablespoon of the graham cracker mixture into each muffin cup and press down firmly.
- In another bowl, beat softened cream cheese until smooth.
- Gradually mix in sugar and vanilla extract until fully combined.
- Stir in chocolate chips for added sweetness.
- Spoon about two tablespoons of cheesecake filling over each graham cracker crust, smoothing it out if necessary.
- Bake in the preheated oven for about 15-18 minutes, until set around the edges but slightly jiggly in the center.
- Remove from oven and immediately top with mini marshmallows; return to oven for an additional couple of minutes until they puff up nicely.
