Description

Irresistible Mini S’mores Cheesecake Bites are a delightful twist on the classic campfire treat, blending creamy cheesecake with chocolate and marshmallows into bite-sized perfection.


Ingredients

  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 325°F (160°C). Line a mini muffin pan with paper liners or spray with nonstick cooking spray.
  2. In a medium bowl, combine graham cracker crumbs and melted butter until it resembles wet sand.
  3. Spoon one tablespoon of the graham cracker mixture into each muffin cup and press down firmly.
  4. In another bowl, beat softened cream cheese until smooth.
  5. Gradually mix in sugar and vanilla extract until fully combined.
  6. Stir in chocolate chips for added sweetness.
  7. Spoon about two tablespoons of cheesecake filling over each graham cracker crust, smoothing it out if necessary.
  8. Bake in the preheated oven for about 15-18 minutes, until set around the edges but slightly jiggly in the center.
  9. Remove from oven and immediately top with mini marshmallows; return to oven for an additional couple of minutes until they puff up nicely.
