Description

Savor the delightful blend of creamy cheesecake, crunchy graham crackers, and gooey marshmallows in these easy-to-make mini s’mores cheesecake bites!


Ingredients

  • 1 cup finely crushed graham crackers
  • 4 tbsp unsalted butter (melted)
  • 8 oz cream cheese (full-fat, softened)
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream (whipped to soft peaks)
  • 1 cup mini marshmallows
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine crushed graham crackers and melted butter until it resembles wet sand.
  3. Press the mixture firmly into the bottoms of mini muffin tins lined with paper liners.
  4. In a separate bowl, beat softened cream cheese and sugar until smooth.
  5. Add vanilla extract and mix well.
  6. Gently fold in whipped heavy cream until fully combined.
  7. Spoon or pipe the cheesecake mixture over the prepared crusts in the mini muffin tins.
  8. Top each with mini marshmallows and sprinkle chocolate chips on top.
  9. Bake in the preheated oven for about 10-12 minutes or until marshmallows are golden brown.
  10. Remove from oven and let cool at room temperature.
  11. Transfer to the refrigerator for at least 1 hour to set.
  12. Once chilled, gently peel away from liners and serve on a platter.
  13. Drizzle extra melted chocolate on top if desired.
