- 1 cup finely crushed graham crackers
- 4 tbsp unsalted butter (melted)
- 8 oz cream cheese (full-fat, softened)
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream (whipped to soft peaks)
- 1 cup mini marshmallows
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine crushed graham crackers and melted butter until it resembles wet sand.
- Press the mixture firmly into the bottoms of mini muffin tins lined with paper liners.
- In a separate bowl, beat softened cream cheese and sugar until smooth.
- Add vanilla extract and mix well.
- Gently fold in whipped heavy cream until fully combined.
- Spoon or pipe the cheesecake mixture over the prepared crusts in the mini muffin tins.
- Top each with mini marshmallows and sprinkle chocolate chips on top.
- Bake in the preheated oven for about 10-12 minutes or until marshmallows are golden brown.
- Remove from oven and let cool at room temperature.
- Transfer to the refrigerator for at least 1 hour to set.
- Once chilled, gently peel away from liners and serve on a platter.
- Drizzle extra melted chocolate on top if desired.
