Description

  • ½ cup unsalted butter, melted
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup fresh lemon juice
  • 2 tbsp lemon zest
  • 4 large egg yolks
  • Whipped cream (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter until crumbly.
  3. Press the mixture firmly into a pie dish and bake for about 8 minutes until lightly golden.
  4. In another bowl, whisk together sweetened condensed milk, fresh lemon juice, lemon zest, and egg yolks until smooth.
  5. Once the crust has cooled slightly, pour the lemon filling into it and spread evenly.
  6. Bake in the oven for about 15 minutes until set but slightly wobbly in the center.
  7. Allow to cool at room temperature before refrigerating for at least two hours.
