- 4 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 4 cloves fresh garlic (minced)
- 1-inch piece fresh ginger (grated)
- 1 cup tomato puree
- 1 cup heavy cream
- 2 tsp garam masala
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt to taste
Instructions
- In a bowl, combine chicken pieces, minced garlic, grated ginger, garam masala, cumin powder, coriander powder, and salt. Cover and marinate in the fridge for at least 1 hour.
- Heat oil in a large skillet over medium heat. Add marinated chicken and cook until golden brown on all sides (about 6 minutes). Remove chicken from the skillet and set aside.
- In the same skillet, add tomato puree with remaining garlic and ginger. Simmer gently while stirring for about 5 minutes.
- Reduce heat to low and stir in heavy cream. Return chicken to the skillet along with any juices. Allow to simmer on low heat for another 10 minutes.
- Serve over fluffy basmati rice or with warm naan bread. Garnish with fresh cilantro if desired.
