Ingredients

  • 4 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 4 cloves fresh garlic (minced)
  • 1-inch piece fresh ginger (grated)
  • 1 cup tomato puree
  • 1 cup heavy cream
  • 2 tsp garam masala
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste

Instructions

  1. In a bowl, combine chicken pieces, minced garlic, grated ginger, garam masala, cumin powder, coriander powder, and salt. Cover and marinate in the fridge for at least 1 hour.
  2. Heat oil in a large skillet over medium heat. Add marinated chicken and cook until golden brown on all sides (about 6 minutes). Remove chicken from the skillet and set aside.
  3. In the same skillet, add tomato puree with remaining garlic and ginger. Simmer gently while stirring for about 5 minutes.
  4. Reduce heat to low and stir in heavy cream. Return chicken to the skillet along with any juices. Allow to simmer on low heat for another 10 minutes.
  5. Serve over fluffy basmati rice or with warm naan bread. Garnish with fresh cilantro if desired.
