Instructions
- For the Crust:
- 1. Preheat your oven to 325°F (165°C).
- 2. In a bowl, combine graham cracker crumbs and melted butter until well mixed.
- 3. Press the mixture firmly into the bottom of a springform pan.
- 4. Bake for about 10 minutes, then allow to cool.
- For the Filling:
- 1. In a mixing bowl, beat softened cream cheese until smooth.
- 2. Gradually add granulated sugar while mixing until fluffy.
- 3. Add eggs one at a time, mixing well after each addition.
- 4. Pour in eggnog, nutmeg, and cinnamon; mix just until combined—do not overmix.
- 5. Pour the filling over the cooled crust in the springform pan.
- Baking:
- 1. Bake in preheated oven for 55-60 minutes or until set but slightly jiggly in the center.
- 2. Once baked, turn off the oven and slightly crack open the door; let cheesecake cool inside for about an hour.
- 3. Transfer to the refrigerator and chill for at least four hours or overnight.
