  • Zest of 1 large orange
  • 1 cup fresh or dried cranberries (if dried, soak in warm water)
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan with nonstick cooking spray or butter.
  2. In a large mixing bowl, whisk together flour, baking powder, sugar, and salt until combined.
  3. In another bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Stir in the orange zest and milk until fully combined.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula. Gently incorporate the cranberries.
  6. Pour the batter into the prepared loaf pan and smooth out the top. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
