- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1 large egg
- 2 tbsp chopped fresh herbs (parsley or basil)
- Salt and pepper to taste
- 4 cups romaine lettuce or mixed greens
- 1 cup cherry tomatoes (halved)
- 1 medium cucumber (sliced)
- Your favorite dressing (ranch, vinaigrette, etc.)
Instructions
- In a large bowl, combine ground turkey, breadcrumbs, egg, chopped herbs, salt, and pepper. Mix until just combined.
- Form the mixture into four evenly sized patties.
- Heat a non-stick skillet over medium heat and add a drizzle of oil. Cook patties for about five minutes per side until browned and cooked through (internal temperature should reach 165°F/74°C).
- While patties are cooking, chop lettuce, slice cucumbers, and halve cherry tomatoes.
- In each bowl, layer lettuce first followed by cucumbers and tomatoes.
- Place a cooked turkey patty on top of each salad bowl.
- Drizzle with your chosen dressing before serving.
