Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 tbsp chopped fresh herbs (parsley or basil)
  • Salt and pepper to taste
  • 4 cups romaine lettuce or mixed greens
  • 1 cup cherry tomatoes (halved)
  • 1 medium cucumber (sliced)
  • Your favorite dressing (ranch, vinaigrette, etc.)

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, egg, chopped herbs, salt, and pepper. Mix until just combined.
  2. Form the mixture into four evenly sized patties.
  3. Heat a non-stick skillet over medium heat and add a drizzle of oil. Cook patties for about five minutes per side until browned and cooked through (internal temperature should reach 165°F/74°C).
  4. While patties are cooking, chop lettuce, slice cucumbers, and halve cherry tomatoes.
  5. In each bowl, layer lettuce first followed by cucumbers and tomatoes.
  6. Place a cooked turkey patty on top of each salad bowl.
  7. Drizzle with your chosen dressing before serving.
