- 3–4 boneless skinless chicken breasts
- 2 large sweet potatoes
- 2 ripe avocados
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh cilantro
- Juice of 2 limes
- 1 tsp garlic powder
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick cooking spray.
- Peel and cube the sweet potatoes into bite-sized pieces. Toss them in 1 tablespoon of olive oil, salt, and pepper, then spread evenly in the baking dish.
- Roast the sweet potatoes for about 25-30 minutes until tender and caramelized.
- Season chicken breasts with salt, pepper, garlic powder, and lime juice. Heat remaining olive oil in a skillet over medium-high heat. Cook chicken for about 6 minutes per side until golden brown.
- Slice cooked chicken and layer it over roasted sweet potatoes in each bowl. Add sliced avocados and sprinkle with fresh cilantro.
- Mix lime juice with garlic powder and drizzle over each bowl before serving.
