Ingredients

  • 34 boneless skinless chicken breasts
  • 2 large sweet potatoes
  • 2 ripe avocados
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh cilantro
  • Juice of 2 limes
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick cooking spray.
  2. Peel and cube the sweet potatoes into bite-sized pieces. Toss them in 1 tablespoon of olive oil, salt, and pepper, then spread evenly in the baking dish.
  3. Roast the sweet potatoes for about 25-30 minutes until tender and caramelized.
  4. Season chicken breasts with salt, pepper, garlic powder, and lime juice. Heat remaining olive oil in a skillet over medium-high heat. Cook chicken for about 6 minutes per side until golden brown.
  5. Slice cooked chicken and layer it over roasted sweet potatoes in each bowl. Add sliced avocados and sprinkle with fresh cilantro.
  6. Mix lime juice with garlic powder and drizzle over each bowl before serving.
