- 1 box yellow cake mix
- 1 cup fresh cranberries
- 1 cup 100% cranberry juice
- 1 can (14 oz) sweetened condensed milk
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, prepare the yellow cake mix according to package instructions.
- Pour the batter into the prepared pan and bake for about 25-30 minutes or until a toothpick comes out clean.
- Allow the cake to cool slightly. Use the end of a wooden spoon to poke holes all over the top of the warm cake.
- Pour cranberry juice evenly over the top of the warm cake, allowing it to soak in for about an hour.
- In a mixing bowl, whip together heavy cream and powdered sugar until soft peaks form. Spread over the cooled poke cake.
- Slice and serve chilled or at room temperature for an irresistible treat.
