Ingredients

  • 1 box yellow cake mix
  • 1 cup fresh cranberries
  • 1 cup 100% cranberry juice
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, prepare the yellow cake mix according to package instructions.
  3. Pour the batter into the prepared pan and bake for about 25-30 minutes or until a toothpick comes out clean.
  4. Allow the cake to cool slightly. Use the end of a wooden spoon to poke holes all over the top of the warm cake.
  5. Pour cranberry juice evenly over the top of the warm cake, allowing it to soak in for about an hour.
  6. In a mixing bowl, whip together heavy cream and powdered sugar until soft peaks form. Spread over the cooled poke cake.
  7. Slice and serve chilled or at room temperature for an irresistible treat.
