- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1/2 cup sour cream (or Greek yogurt)
- 1 tsp cumin
- 1 tsp chili powder
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Chop the onion and mince the garlic.
- In a medium pot over medium heat, heat olive oil. Add chicken breasts and cook until golden brown on both sides, about 5 minutes per side.
- Remove the chicken from the pot. Add chopped onion and minced garlic; sauté until fragrant, about 3 minutes.
- Return the chicken to the pot along with white beans, green chilies, chicken broth, cumin, chili powder, salt, and pepper. Bring to a gentle simmer for about 20 minutes.
- Blend half of the mixture (chicken included) until smooth using an immersion blender or in a regular blender.
- Return the blended mixture to the pot and stir in sour cream until well combined. Heat through for another couple of minutes before serving.
- Transfer to bowls and garnish with fresh cilantro or additional sour cream if desired.
