Warm up your evening with this creamy, flavorful white chicken chili that’s easy to make and perfect for a cozy dinner date.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the onion and mince the garlic.
  2. In a medium pot over medium heat, heat olive oil. Add chicken breasts and cook until golden brown on both sides, about 5 minutes per side.
  3. Remove the chicken from the pot. Add chopped onion and minced garlic; sauté until fragrant, about 3 minutes.
  4. Return the chicken to the pot along with white beans, green chilies, chicken broth, cumin, chili powder, salt, and pepper. Bring to a gentle simmer for about 20 minutes.
  5. Blend half of the mixture (chicken included) until smooth using an immersion blender or in a regular blender.
  6. Return the blended mixture to the pot and stir in sour cream until well combined. Heat through for another couple of minutes before serving.
  7. Transfer to bowls and garnish with fresh cilantro or additional sour cream if desired.
