- 2 cups cooked rotisserie chicken, shredded
- 1 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes).
- Stir in chopped carrots and celery; cook until softened, stirring occasionally (about 5 minutes).
- Add minced garlic and sauté for an additional minute until fragrant.
- Pour in the chicken broth, scraping any bits from the bottom of the pot. Bring to a gentle simmer.
- After about 10 minutes of simmering, add cream cheese and stir until melted and fully incorporated.
- Mix in shredded chicken and dried thyme; cook for another 5 minutes until heated through.
- Serve hot in bowls, garnished with fresh herbs if desired.
