- 1 Red Onion
- 2 Tangerines (juiced and zested)

- 3 tbsp Extra Virgin Olive Oil

Instructions
- Preheat your oven to 425°F (220°C).
- Chop bell peppers, zucchini, and red onion into bite-sized pieces and place in a large bowl.
- In a separate bowl, whisk together olive oil, tangerine juice, tangerine zest, sumac, salt, and pepper.
- Pour the marinade over the chopped vegetables and toss until evenly coated.
- Spread the marinated veggies onto a parchment-lined baking sheet.
- Roast in the preheated oven for about 25-30 minutes or until golden brown and tender.
- Let cool slightly before serving. Garnish with extra tangerine slices or fresh herbs if desired.
