Ingredients

  • 3 Bell Peppers (mixed colors)
  • 2 Zucchini
  • 1 Red Onion
  • 2 Tangerines (juiced and zested)
  • 2 tsp Sumac
  • 3 tbsp Extra Virgin Olive Oil
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop bell peppers, zucchini, and red onion into bite-sized pieces and place in a large bowl.
  3. In a separate bowl, whisk together olive oil, tangerine juice, tangerine zest, sumac, salt, and pepper.
  4. Pour the marinade over the chopped vegetables and toss until evenly coated.
  5. Spread the marinated veggies onto a parchment-lined baking sheet.
  6. Roast in the preheated oven for about 25-30 minutes or until golden brown and tender.
  7. Let cool slightly before serving. Garnish with extra tangerine slices or fresh herbs if desired.
