- 1 cup quinoa
- 1 cup diced cucumber
- 1 cup halved cherry tomatoes
- 1/2 cup thinly sliced red onion
- 1/2 cup fresh mint leaves, roughly chopped
- Juice of 2 fresh limes
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil over medium heat. Once boiling, reduce to low heat, cover tightly, and simmer for about 15 minutes or until all water is absorbed.
- Remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork before transferring to a large mixing bowl.
- While quinoa cools, dice cucumber into small cubes, halve cherry tomatoes, and thinly slice red onion. Roughly chop mint leaves.
- In a small bowl or jar, whisk together the juice of 2 limes, 3 tablespoons olive oil, salt, and pepper.
- Add diced cucumber, cherry tomatoes, sliced onion, and chopped mint to the quinoa bowl. Drizzle dressing over the salad and toss gently to combine.
- Transfer salad to serving bowls or a platter. Best served chilled or at room temperature.
