Description

Zesty Lime and Mint Quinoa Salad is a refreshing, vibrant dish that combines wholesome quinoa with fresh vegetables and zesty lime dressing. Perfect for summer gatherings!


Ingredients

  • 1 cup quinoa
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup thinly sliced red onion
  • 1/2 cup fresh mint leaves, roughly chopped
  • Juice of 2 fresh limes
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil over medium heat. Once boiling, reduce to low heat, cover tightly, and simmer for about 15 minutes or until all water is absorbed.
  2. Remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork before transferring to a large mixing bowl.
  3. While quinoa cools, dice cucumber into small cubes, halve cherry tomatoes, and thinly slice red onion. Roughly chop mint leaves.
  4. In a small bowl or jar, whisk together the juice of 2 limes, 3 tablespoons olive oil, salt, and pepper.
  5. Add diced cucumber, cherry tomatoes, sliced onion, and chopped mint to the quinoa bowl. Drizzle dressing over the salad and toss gently to combine.
  6. Transfer salad to serving bowls or a platter. Best served chilled or at room temperature.
