Description

Zesty Lime and Ginger Vegan Stir-Fry is a quick, colorful dish bursting with fresh vegetables and tofu, drizzled in a tangy lime-ginger sauce. Perfect for busy weeknights!


Ingredients

  • 14 oz Firm Tofu, pressed and cut into cubes
  • 1 cup Bell Peppers, sliced (mixed colors)
  • 1 cup Broccoli Florets
  • 1 cup Carrots, thinly sliced
  • 2 tsp Fresh Ginger, grated
  • 3 tbsp Lime Juice, freshly squeezed
  • 3 tbsp Low-Sodium Soy Sauce
  • 2 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 2 Green Onions, sliced

Instructions

  1. Press the tofu to remove excess moisture for about 15 minutes. Cut it into bite-sized cubes.
  2. Slice bell peppers into strips, thinly slice carrots, and break broccoli into florets.
  3. In a large skillet or wok, heat olive oil over medium-high heat. Sauté minced garlic and grated ginger for about one minute until fragrant.
  4. Add cubed tofu to the pan. Cook until golden brown on all sides for about five minutes.
  5. Add chopped veggies to the skillet and stir-fry for four minutes until tender but still crisp.
  6. Pour soy sauce and lime juice over the stir-fry. Toss well to coat evenly, then remove from heat.
  7. Transfer to plates and garnish with sliced green onions for a fresh touch.
