- 14 oz Firm Tofu, pressed and cut into cubes
- 1 cup Bell Peppers, sliced (mixed colors)
- 1 cup Broccoli Florets
- 1 cup Carrots, thinly sliced
- 2 tsp Fresh Ginger, grated
- 3 tbsp Lime Juice, freshly squeezed
- 3 tbsp Low-Sodium Soy Sauce
- 2 tbsp Olive Oil
- 2 cloves Garlic, minced
- 2 Green Onions, sliced
Instructions
- Press the tofu to remove excess moisture for about 15 minutes. Cut it into bite-sized cubes.
- Slice bell peppers into strips, thinly slice carrots, and break broccoli into florets.
- In a large skillet or wok, heat olive oil over medium-high heat. Sauté minced garlic and grated ginger for about one minute until fragrant.
- Add cubed tofu to the pan. Cook until golden brown on all sides for about five minutes.
- Add chopped veggies to the skillet and stir-fry for four minutes until tender but still crisp.
- Pour soy sauce and lime juice over the stir-fry. Toss well to coat evenly, then remove from heat.
- Transfer to plates and garnish with sliced green onions for a fresh touch.
