- 4 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- Salt and pepper to taste
- Fresh rosemary, thyme, and parsley (to taste)
- 1.5 lbs Yukon Gold or red potatoes, cut into even chunks
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (rosemary or thyme, optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine chicken thighs, olive oil, minced garlic, lemon zest, salt, and pepper. Toss to coat.
- In another bowl, toss potato chunks with olive oil, salt, pepper, and optional fresh herbs.
- Place marinated chicken thighs skin-side up in a large baking dish. Surround with seasoned potato chunks.
- Drizzle remaining lemon juice over the chicken and potatoes.
- Bake in preheated oven for about 45-50 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Once cooked through, transfer to plates and drizzle with extra olive oil or lemon juice if desired.
