Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • Fresh rosemary, thyme, and parsley (to taste)
  • 1.5 lbs Yukon Gold or red potatoes, cut into even chunks
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (rosemary or thyme, optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine chicken thighs, olive oil, minced garlic, lemon zest, salt, and pepper. Toss to coat.
  3. In another bowl, toss potato chunks with olive oil, salt, pepper, and optional fresh herbs.
  4. Place marinated chicken thighs skin-side up in a large baking dish. Surround with seasoned potato chunks.
  5. Drizzle remaining lemon juice over the chicken and potatoes.
  6. Bake in preheated oven for about 45-50 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Once cooked through, transfer to plates and drizzle with extra olive oil or lemon juice if desired.
