  • 2 cans sweet corn, drained
  • 1 can creamed corn
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1 box (8.5 oz) Jiffy corn muffin mix
  • 1 1/2 cups shredded sharp cheddar cheese (divided)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with nonstick spray or butter.
  2. In a large mixing bowl, combine the drained sweet corn, creamed corn, sour cream, melted butter, Jiffy corn muffin mix, and half of the shredded cheddar cheese. Stir until well combined.
  3. Pour the mixture into the prepared baking dish and spread it evenly using a spatula.
  4. Sprinkle the remaining cheddar cheese over the top of the casserole.
  5. Bake in the preheated oven for about 45 minutes or until set in the middle and golden brown on top.
