- 2 cans sweet corn, drained
- 1 can creamed corn
- 1 cup sour cream
- 1/2 cup unsalted butter, melted
- 1 box (8.5 oz) Jiffy corn muffin mix
- 1 1/2 cups shredded sharp cheddar cheese (divided)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with nonstick spray or butter.
- In a large mixing bowl, combine the drained sweet corn, creamed corn, sour cream, melted butter, Jiffy corn muffin mix, and half of the shredded cheddar cheese. Stir until well combined.
- Pour the mixture into the prepared baking dish and spread it evenly using a spatula.
- Sprinkle the remaining cheddar cheese over the top of the casserole.
- Bake in the preheated oven for about 45 minutes or until set in the middle and golden brown on top.
- Allow to cool slightly before serving. Scoop generous portions onto plates and enjoy!
