- 4 hoagie rolls or 4 large zucchini (halved)
- 1 pound Italian sausage (sweet or spicy)
- 1 cup bell peppers (chopped, assorted colors)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 1 cup marinara sauce (homemade or store-bought)
- 1 cup shredded mozzarella cheese
- Fresh basil (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- If using hoagie rolls, hollow them out slightly to make room for the filling.
- In a skillet over medium heat, add a splash of olive oil.
- Sauté chopped bell peppers and onion until softened, about 5 minutes.
- Add minced garlic and sauté for an additional minute.
- Push the veggies to one side and add the Italian sausage, cooking until browned all over (about 8 minutes). If whole, slice into bite-sized pieces afterward.
- Mix in marinara sauce with the sausage and vegetables until well combined.
- Fill each hoagie roll or zucchini with the sausage mixture.
- Top generously with shredded mozzarella cheese.
- Place on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown and bubbly.
- Remove from oven and garnish with fresh basil before serving.
