  • 4 hoagie rolls or 4 large zucchini (halved)
  • 1 pound Italian sausage (sweet or spicy)
  • 1 cup bell peppers (chopped, assorted colors)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 cup marinara sauce (homemade or store-bought)
  • 1 cup shredded mozzarella cheese
  • Fresh basil (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using hoagie rolls, hollow them out slightly to make room for the filling.
  3. In a skillet over medium heat, add a splash of olive oil.
  4. Sauté chopped bell peppers and onion until softened, about 5 minutes.
  5. Add minced garlic and sauté for an additional minute.
  6. Push the veggies to one side and add the Italian sausage, cooking until browned all over (about 8 minutes). If whole, slice into bite-sized pieces afterward.
  7. Mix in marinara sauce with the sausage and vegetables until well combined.
  8. Fill each hoagie roll or zucchini with the sausage mixture.
  9. Top generously with shredded mozzarella cheese.
  10. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown and bubbly.
  11. Remove from oven and garnish with fresh basil before serving.
