- 1 lb flank steak
- 2 tbsp olive oil
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp salt
- 1/2 tsp pepper
- Juice of 2 limes
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 ripe avocados
- Juice of 1 lime
- 1/4 tsp garlic powder
- Salt and pepper to taste
- Water as needed for consistency
Instructions
- In a bowl, whisk together olive oil, cumin, chili powder, salt, pepper, and lime juice.
- Add flank steak and marinate for at least 30 minutes or up to overnight.
- Preheat grill to medium-high heat.
- Remove steak from marinade (reserve marinade) and grill for about 6-8 minutes on each side until desired doneness is reached.
- While the steak grills, toss sliced bell peppers and onion in olive oil; season with salt and pepper. Grill alongside steak until tender and slightly charred (about 5-7 minutes).
- In a blender or food processor, combine avocados, lime juice, garlic powder, salt, pepper, and a splash of water. Blend until smooth and creamy.
- Once grilled, slice steak against the grain into strips.
- In bowls or plates, layer grilled veggies first followed by steak slices drizzled with avocado dressing.
- Garnish with fresh cilantro if desired. Serve immediately.
