Ingredients

  • 1 lb flank steak
  • 2 tbsp olive oil
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • Juice of 2 limes
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 ripe avocados
  • Juice of 1 lime
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Water as needed for consistency

Instructions

  1. In a bowl, whisk together olive oil, cumin, chili powder, salt, pepper, and lime juice.
  2. Add flank steak and marinate for at least 30 minutes or up to overnight.
  3. Preheat grill to medium-high heat.
  4. Remove steak from marinade (reserve marinade) and grill for about 6-8 minutes on each side until desired doneness is reached.
  5. While the steak grills, toss sliced bell peppers and onion in olive oil; season with salt and pepper. Grill alongside steak until tender and slightly charred (about 5-7 minutes).
  6. In a blender or food processor, combine avocados, lime juice, garlic powder, salt, pepper, and a splash of water. Blend until smooth and creamy.
  7. Once grilled, slice steak against the grain into strips.
  8. In bowls or plates, layer grilled veggies first followed by steak slices drizzled with avocado dressing.
  9. Garnish with fresh cilantro if desired. Serve immediately.
