- 1 lb lean ground beef
- 1/2 cup plain breadcrumbs
- 1 large egg
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cups low-sodium chicken broth
Instructions
- Prepare the Meatballs: In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix gently until just combined. Form into small balls (about 1 inch in diameter).
- Brown the Meatballs: Heat a splash of olive oil in a large pot over medium heat. Add meatballs to the pot and cook until browned on all sides (about 5-7 minutes). Remove and set aside.
- Sauté Vegetables: In the same pot (do not clean), add diced carrots and celery. Sauté for about 5 minutes until softened.
- Add Broth: Pour in chicken broth and bring to a simmer, scraping any browned bits from the bottom of the pot.
- Return Meatballs: Add the browned meatballs back into the pot along with sautéed vegetables. Allow to simmer for an additional 10 minutes.
- Serve Hot: Ladle soup into bowls and garnish with fresh herbs if desired.
