Ingredients
Scale
- 1 lb ground turkey
- 2 cups cooked rice (white or brown)
- 1/2 cup teriyaki sauce
- 1 cup fresh vegetables (bell peppers, broccoli, or snap peas)
- 2 green onions, chopped
- 2 tbsp soy sauce (low-sodium recommended)
- 1 tbsp brown sugar
Instructions
- Prepare the Rice: Cook rice according to package instructions. Fluff with a fork and set aside.
- Sauté the Turkey: In a large skillet over medium-high heat, add a splash of oil. Once hot, add ground turkey and cook for about 6-8 minutes until browned, breaking it apart with a spatula.
- Add Vegetables: Toss in your choice of vegetables once the turkey is browned. Stir-fry for an additional 3-5 minutes until tender but crisp.
- Create Your Sauce: In a small bowl, mix teriyaki sauce, soy sauce, and brown sugar. Whisk until smooth. Pour this mixture over the turkey and vegetables in the skillet and simmer for about 2-3 minutes.
- Assemble Your Bowls: Scoop rice into bowls and top with the turkey-teriyaki mixture.
- Garnish & Serve: Finish each bowl with chopped green onions for added freshness.
