- 2–3 cloves garlic, minced
- 1 medium bell pepper, diced
- 1 can (14.5 oz) diced tomatoes (no added salt)
- 1 cup shredded cheddar cheese

Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
- In a large skillet over medium heat, add a splash of oil. Sauté the chopped onion, diced bell pepper, and minced garlic until soft and fragrant, about 5 minutes.
- Add the ground beef to the skillet with the sautéed veggies. Cook until browned while breaking it apart with a spatula, about 7 to 10 minutes. Season with salt, pepper, and Italian seasoning.
- Stir in the riced cauliflower and diced tomatoes until well mixed. Let it simmer for about 5 minutes to allow flavors to meld.
- Pour the mixture into your prepared baking dish evenly. Sprinkle shredded cheddar cheese generously over the top.
