- 2–3 pounds boneless chicken thighs
- 2 tablespoons authentic Jamaican curry powder
- 1 can (13.5 oz) full-fat coconut milk
- 1 large onion, chopped
- 3–4 fresh garlic cloves, minced
- 1 cup low-sodium chicken broth
- 1 cup chopped bell peppers (red or green)
- 1 handful fresh thyme leaves
Instructions
- Cut boneless chicken thighs into bite-sized pieces. In a large bowl, combine with curry powder, minced garlic, salt, and pepper. Marinate in the fridge for at least an hour (overnight is ideal).
- In a large pot or Dutch oven over medium heat, add a splash of oil. Sauté chopped onions until translucent (about 3 minutes).
- Add marinated chicken to the pot and cook until lightly browned on all sides (approximately 5 minutes).
- Pour in coconut milk and chicken broth while stirring gently. Add chopped bell peppers and fresh thyme. Bring to a gentle boil, then reduce heat to low and cover. Let simmer for about 30 minutes.
- Taste your curry and adjust seasoning if necessary; consider adding more salt or curry powder for extra flavor.
- Serve over fluffy rice or alongside warm roti, drizzling sauce over the top for added flavor.
