- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1 cup fresh mint leaves, roughly chopped

- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions

- Combine Ingredients: In a large mixing bowl, combine the fluffed couscous with chopped tomatoes, cucumbers, onions, and mint. Toss gently to combine.
