Ingredients

  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup fresh mint leaves, roughly chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  2. Chop Your Produce: While the couscous cools, halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion. Roughly chop the mint leaves as well.
  3. Fluff Up That Couscous: Once rested, fluff the couscous using a fork.
  4. Combine Ingredients: In a large mixing bowl, combine the fluffed couscous with chopped tomatoes, cucumbers, onions, and mint. Toss gently to combine.
  5. Whisk Together Dressing: In a separate bowl or jar, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
