- 1 can (15 oz) canned chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/2 medium red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup freshly squeezed lemon juice
- 3 tbsp extra virgin olive oil
- Salt & pepper to taste
Instructions
- Rinse and drain the canned chickpeas thoroughly.
- Halve the cherry tomatoes and dice the cucumber into bite-sized pieces. Thinly slice the red onion.
- In a large mixing bowl, toss together the chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
- In a small bowl or jar, mix together olive oil, lemon juice, salt, and pepper until well combined.
- Drizzle the dressing over the salad mixture while tossing gently to coat all ingredients evenly.
- Allow the salad to chill in the fridge for about an hour before serving to enhance flavor mingling.
