Ingredients

  • 1 can (15 oz) canned chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Rinse and drain the canned chickpeas thoroughly.
  2. Halve the cherry tomatoes and dice the cucumber into bite-sized pieces. Thinly slice the red onion.
  3. In a large mixing bowl, toss together the chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  4. In a small bowl or jar, mix together olive oil, lemon juice, salt, and pepper until well combined.
  5. Drizzle the dressing over the salad mixture while tossing gently to coat all ingredients evenly.
  6. Allow the salad to chill in the fridge for about an hour before serving to enhance flavor mingling.
