- 8 oz whole wheat or gluten-free spaghetti
- 4 cups Swiss chard, chopped
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 14 oz diced canned tomatoes, with juice
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Red pepper flakes to taste
Instructions
- Wash Swiss chard thoroughly and chop into bite-sized pieces. Mince garlic for added flavor.
- In a large skillet over medium heat, add olive oil until shimmering. Sauté minced garlic for about one minute until fragrant.
- Pour in canned tomatoes (juice included). Add Italian herbs and red pepper flakes if desired. Simmer for about five minutes to meld flavors.
- Add spaghetti directly into the skillet along with 2 cups of water. Stir well to ensure pasta is submerged. Bring to a boil while stirring occasionally.
- Once boiling, reduce heat to low, cover, and cook for about 10 minutes or until spaghetti is al dente. Add more water if necessary.
- Stir in chopped Swiss chard during the last two minutes of cooking time, allowing it to wilt beautifully into the dish.
- Serve hot, drizzled with additional olive oil if desired.
