- 1 cup canned pineapple chunks (drained)

- ½ cup butter (melted and cooled)
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, mash the overripe bananas until smooth. Lumps are okay if you prefer some texture.
- Add melted butter, sugar, eggs, and drained pineapple chunks to the mashed bananas. Stir well until fully combined.
- In another bowl, whisk together flour and baking powder. Gradually fold this mixture into the wet ingredients until just combined.
- Gently fold in the shredded coconut until evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan and bake for about 60 minutes or until golden brown and a toothpick inserted in the center comes out clean.
