- 4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 2 medium carrots, sliced thinly
- 2 celery stalks, diced
- 2 cups egg noodles
- 6 cups chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Prepare Your Ingredients: Chop the carrots, celery, and garlic into bite-sized pieces.
- Cook the Chicken: In a large pot over medium heat, add a splash of oil. Cook the chicken breasts until golden brown on both sides (about 5 minutes per side). Remove and set aside.
- Sauté the Veggies: In the same pot, add minced garlic, sliced carrots, and diced celery. Sauté for about 5 minutes until softened.
- Add Broth & Season: Pour in the chicken broth and add salt, pepper, and dried thyme. Bring to a gentle boil.
- Shred Chicken & Add Noodles: Shred the cooked chicken into bite-sized pieces. Add it back into the pot along with egg noodles. Simmer until noodles are cooked through (about 8 minutes).
