- 2 cups whole milk
- 1 cup coconut milk
- 1/2 cup granulated sugar
- 4 cardamom pods, crushed
- A pinch of saffron threads
- 1 tsp pure vanilla extract
- 1/4 cup chopped nuts (pistachios or almonds) for garnish
Instructions
- Rinse the rice under cold water until it runs clear to remove excess starch.
- In a large pot, combine whole milk and coconut milk over medium heat. Stir occasionally until it reaches a gentle boil.
- Reduce heat to low, then add rinsed rice, sugar, crushed cardamom pods, saffron threads, and vanilla extract. Stir well.
- Cover the pot and let it simmer on low heat for about 30-40 minutes, stirring frequently to prevent sticking.
- After simmering, check the consistency; it should be thick yet pourable. If too thin, continue to simmer while stirring.
- Remove from heat and let cool slightly before serving. Spoon into bowls or glasses and garnish with chopped nuts.
