Ingredients

  • 1 cup short-grain rice (Arborio or sushi rice)
  • 2 cups whole milk
  • 1 cup coconut milk
  • 1/2 cup granulated sugar
  • 4 cardamom pods, crushed
  • A pinch of saffron threads
  • 1 tsp pure vanilla extract
  • 1/4 cup chopped nuts (pistachios or almonds) for garnish

Instructions

  1. Rinse the rice under cold water until it runs clear to remove excess starch.
  2. In a large pot, combine whole milk and coconut milk over medium heat. Stir occasionally until it reaches a gentle boil.
  3. Reduce heat to low, then add rinsed rice, sugar, crushed cardamom pods, saffron threads, and vanilla extract. Stir well.
  4. Cover the pot and let it simmer on low heat for about 30-40 minutes, stirring frequently to prevent sticking.
  5. After simmering, check the consistency; it should be thick yet pourable. If too thin, continue to simmer while stirring.
  6. Remove from heat and let cool slightly before serving. Spoon into bowls or glasses and garnish with chopped nuts.
