Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round baking pans.
  2. In a bowl, whisk together flour, baking powder, and salt until well combined.
  3. In another bowl, beat the softened butter and granulated sugar until light and fluffy (about three minutes).
  4. Add honey, eggs (one at a time), and vanilla extract to the butter mixture. Mix until smooth.
  5. Gradually mix in the dry ingredients until just combined; avoid overmixing.
  6. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean from the center. Let cool.
  7. For the frosting: Beat softened cream cheese and brewed coffee together until smooth.
  8. Gradually add powdered sugar until you achieve a creamy consistency.
  9. Once cakes are cool, place one layer on a serving plate and frost generously with coffee cream cheese frosting.
  10. Place the second cake layer on top and frost the top and sides of the cake.
