Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (plain or Italian-style)
  • 2 cloves garlic, minced
  • 2 green onions, chopped (optional)
  • Zest of 2 tangerines
  • 1/4 cup fresh tangerine juice
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • Zest of 1 tangerine

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray it with nonstick cooking spray.
  2. In a large bowl, combine ground chicken, breadcrumbs, minced garlic, chopped green onions (if using), and zest from two tangerines. Mix until well combined.
  3. Shape the mixture into golf ball-sized meatballs and place them on the prepared baking sheet with space between each.
  4. In a small saucepan over medium heat, mix fresh tangerine juice, soy sauce, honey, and zest from one tangerine. Stir until slightly thickened.
  5. Bake the meatballs for 20-25 minutes until cooked through and golden brown. Brush generously with glaze halfway through baking.
  6. Once baked, transfer meatballs to a serving platter and drizzle with extra glaze if desired. Serve warm.
