- 1 lb ground chicken
- 1/2 cup breadcrumbs (plain or Italian-style)
- 2 cloves garlic, minced
- 2 green onions, chopped (optional)
- Zest of 2 tangerines
- 1/4 cup fresh tangerine juice
- 3 tbsp low-sodium soy sauce
- 2 tbsp honey
- Zest of 1 tangerine
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray it with nonstick cooking spray.
- In a large bowl, combine ground chicken, breadcrumbs, minced garlic, chopped green onions (if using), and zest from two tangerines. Mix until well combined.
- Shape the mixture into golf ball-sized meatballs and place them on the prepared baking sheet with space between each.
- In a small saucepan over medium heat, mix fresh tangerine juice, soy sauce, honey, and zest from one tangerine. Stir until slightly thickened.
- Bake the meatballs for 20-25 minutes until cooked through and golden brown. Brush generously with glaze halfway through baking.
- Once baked, transfer meatballs to a serving platter and drizzle with extra glaze if desired. Serve warm.
