Ingredients

  • 4 boneless, skinless chicken thighs (1.5 lbs)
  • 2 fresh tangerines (juiced and zested)
  • 1 cup pitted green olives
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tsp ground cumin
  • 1 cinnamon stick
  • Salt and pepper to taste
  • ½ cup water or chicken broth

Instructions

  1. Prepare Your Ingredients: Chop the onion finely, mince the garlic, pit and slice the olives, and zest the tangerines.
  2. Sauté Aromatics: In a large pot over medium heat, add a splash of olive oil. Once hot, sauté the onion until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Add Chicken: Stir in boneless chicken thighs; season with salt, pepper, and cumin. Cook until lightly browned on all sides (about 6 minutes).
  4. Add Spices and Fruits: Add the cinnamon stick, tangerine juice and segments, olives, and zest. Pour in half a cup of water or chicken broth while stirring to combine flavors.
  5. Simmer: Cover the pot with a lid, reduce heat, and let it simmer for about 30 minutes until the chicken is cooked through.
  6. Serve: Remove from heat, discard the cinnamon stick, and serve hot over fluffy couscous or rice.
