Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, cream softened butter and granulated sugar until light and fluffy (about three minutes).
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Scoop tablespoon-sized amounts of dough, roll into balls, and place on a lined baking sheet.
  7. Create an indentation in each cookie ball with your thumb and fill generously with strawberry jam.
  8. Bake for 10-12 minutes or until edges are golden brown.
  9. While cookies cool on a wire rack, mix powdered sugar with milk until desired consistency is reached.
