  • 1 cup fresh spinach, finely chopped
  • 1 cup cottage cheese
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 large egg

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a small pot, bring water to a boil. Add fresh spinach and blanch for about two minutes until wilted. Drain, cool, and squeeze out excess water. Chop finely.
  3. In a large mixing bowl, whisk together the flour, baking powder, and salt until well mixed.
  4. In another bowl, blend the cottage cheese and egg until smooth. Stir in the chopped spinach.
  5. Gradually add the wet mixture into the dry ingredients, stirring until combined into a soft dough. If too sticky, sprinkle in more flour.
  6. Divide the dough into six equal portions. Roll each piece into a ball and poke a hole through the center to form bagels. Place them on the prepared baking sheet.
  7. Bake in the preheated oven for about 20-25 minutes or until golden brown. Enjoy warm or toasted.
