- 1 cup fresh spinach, finely chopped
- 1 cup cottage cheese
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 large egg
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- In a small pot, bring water to a boil. Add fresh spinach and blanch for about two minutes until wilted. Drain, cool, and squeeze out excess water. Chop finely.
- In a large mixing bowl, whisk together the flour, baking powder, and salt until well mixed.
- In another bowl, blend the cottage cheese and egg until smooth. Stir in the chopped spinach.
- Gradually add the wet mixture into the dry ingredients, stirring until combined into a soft dough. If too sticky, sprinkle in more flour.
- Divide the dough into six equal portions. Roll each piece into a ball and poke a hole through the center to form bagels. Place them on the prepared baking sheet.
- Bake in the preheated oven for about 20-25 minutes or until golden brown. Enjoy warm or toasted.
