- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 can (20 oz) canned pineapple chunks in juice
- 1 red bell pepper, chopped
- 2 tsp chili powder
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 2 tbsp fresh lime juice
Instructions
- Dice the chicken breasts into bite-sized pieces. Chop the red bell pepper and mince the garlic.
- In a bowl, whisk together soy sauce, brown sugar, lime juice, chili powder, and minced garlic until well combined.
- Place diced chicken at the bottom of your slow cooker. Add chopped red bell pepper and canned pineapple chunks.
- Drizzle the prepared sauce over all ingredients in the slow cooker.
- Cover and cook on low for about 6 hours or high for 3 hours until flavors meld and chicken is tender.
