  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 can (20 oz) canned pineapple chunks in juice
  • 1 red bell pepper, chopped
  • 2 tsp chili powder
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp fresh lime juice

Instructions

  1. Dice the chicken breasts into bite-sized pieces. Chop the red bell pepper and mince the garlic.
  2. In a bowl, whisk together soy sauce, brown sugar, lime juice, chili powder, and minced garlic until well combined.
  3. Place diced chicken at the bottom of your slow cooker. Add chopped red bell pepper and canned pineapple chunks.
  4. Drizzle the prepared sauce over all ingredients in the slow cooker.
  5. Cover and cook on low for about 6 hours or high for 3 hours until flavors meld and chicken is tender.
