- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 red bell pepper, diced
- 2 cups pineapple chunks (fresh or canned)
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup teriyaki sauce
- 2 tbsp chili powder
Instructions
- Chop chicken into bite-sized pieces. Dice the red bell pepper and mince the garlic.
- Add chicken, bell pepper, garlic, pineapple chunks, black beans, and diced tomatoes to the slow cooker. Stir well.
- In a separate bowl, whisk together teriyaki sauce and chili powder until smooth. Pour over the chicken mixture.
- Cover the slow cooker and cook on low for about 6 hours or high for 3 hours.
- Once cooked, stir the chili to blend flavors. Adjust seasoning if needed.
- Ladle into bowls and top with fresh cilantro or avocado slices if desired.
