  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 red bell pepper, diced
  • 2 cups pineapple chunks (fresh or canned)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup teriyaki sauce
  • 2 tbsp chili powder

Instructions

  1. Chop chicken into bite-sized pieces. Dice the red bell pepper and mince the garlic.
  2. Add chicken, bell pepper, garlic, pineapple chunks, black beans, and diced tomatoes to the slow cooker. Stir well.
  3. In a separate bowl, whisk together teriyaki sauce and chili powder until smooth. Pour over the chicken mixture.
  4. Cover the slow cooker and cook on low for about 6 hours or high for 3 hours.
  5. Once cooked, stir the chili to blend flavors. Adjust seasoning if needed.
  6. Ladle into bowls and top with fresh cilantro or avocado slices if desired.
