- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1/2 cup low-sodium soy sauce
- 1/3 cup pure honey
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 tsp fresh ginger, minced
Instructions
- Place boneless chicken breasts into the slow cooker.
- In a bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, minced garlic, and ginger until well combined.
- Drizzle the sauce over the chicken in the slow cooker.
- Cover and set the slow cooker on low for about six hours or high for three hours.
- Once cooked through, shred the chicken right in the slow cooker using two forks and stir to coat with sauce.
- Transfer shredded chicken to plates or bowls. Drizzle extra sauce over if desired and serve with steamed rice or noodles.
