- 3–4 boneless, skinless chicken breasts
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- 2 tbsp honey
- 3 garlic cloves, minced
- 2 tbsp fresh rosemary, chopped
- 1 lb baby potatoes, halved
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine balsamic vinegar, olive oil, honey, minced garlic, and chopped rosemary. Add chicken breasts and marinate for at least 10 minutes.
- Wash and halve the baby potatoes.
- Arrange marinated chicken in the center of a sheet pan surrounded by halved baby potatoes. Drizzle any remaining marinade over both.
- Roast in the preheated oven for about 25-30 minutes or until chicken reaches an internal temperature of at least 165°F (74°C).
- Let it rest for a few minutes before serving. Garnish with fresh rosemary if desired.
