Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 2 tbsp honey
  • 3 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 1 lb baby potatoes, halved

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine balsamic vinegar, olive oil, honey, minced garlic, and chopped rosemary. Add chicken breasts and marinate for at least 10 minutes.
  3. Wash and halve the baby potatoes.
  4. Arrange marinated chicken in the center of a sheet pan surrounded by halved baby potatoes. Drizzle any remaining marinade over both.
  5. Roast in the preheated oven for about 25-30 minutes or until chicken reaches an internal temperature of at least 165°F (74°C).
  6. Let it rest for a few minutes before serving. Garnish with fresh rosemary if desired.
