- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1 tbsp fresh ginger, grated
- 3 garlic cloves, minced
- 1/4 cup low-sodium soy sauce
- 1/4 cup honey
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, grated ginger, minced garlic, and half of the soy sauce. Mix until just combined.
- Shape the mixture into small meatballs (about 1 inch in diameter) and place them on the baking sheet with space in between.
- Bake for 20-25 minutes or until golden brown and cooked through.
- While the meatballs are baking, whisk together honey, remaining soy sauce, sesame oil, and rice vinegar in a small saucepan over medium heat.
- Simmer for about five minutes until slightly thickened.
- Once baked, toss the meatballs gently in the sauce until fully coated. Serve over rice or noodles, garnished with chopped green onions and sesame seeds.
