Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two round cake pans (9 inches).
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until well combined.
- In another bowl, mix vegetable oil and buttermilk until combined. Add eggs one at a time, followed by red food coloring and vanilla extract.
- Gradually add the dry ingredients to the wet mixture while gently mixing until just combined.
- Divide the batter evenly between the prepared pans and bake for about 25-30 minutes or until a toothpick inserted comes out clean. Let cool in pans for about ten minutes before transferring to wire racks.
- In a large bowl, beat softened cream cheese and butter together until creamy.
- Gradually add powdered sugar while mixing until smooth and fluffy. Stir in vanilla extract.
- Once cakes are completely cool, frost between layers and on top with cream cheese frosting.
