Ingredients

  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tbsp red food coloring (gel)
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans (9 inches).
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until well combined.
  3. In another bowl, mix vegetable oil and buttermilk until combined. Add eggs one at a time, followed by red food coloring and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture while gently mixing until just combined.
  5. Divide the batter evenly between the prepared pans and bake for about 25-30 minutes or until a toothpick inserted comes out clean. Let cool in pans for about ten minutes before transferring to wire racks.
  6. In a large bowl, beat softened cream cheese and butter together until creamy.
  7. Gradually add powdered sugar while mixing until smooth and fluffy. Stir in vanilla extract.
  8. Once cakes are completely cool, frost between layers and on top with cream cheese frosting.
