Ingredients

  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tbsp red food coloring
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • ½ cup butter (softened)
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt until combined.
  3. In another bowl, mix the oil and buttermilk. Add eggs one at a time while mixing. Stir in red food coloring and vanilla extract until smooth.
  4. Gently fold the dry mixture into the wet mixture until just combined.
  5. Divide batter evenly between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool completely before frosting.
  7. Beat softened cream cheese and butter together until creamy.
  8. Gradually add powdered sugar and vanilla extract until you reach your desired consistency.
  9. Once cooled, layer cakes with frosting in between and spread remaining frosting on top.
