- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup seasoned breadcrumbs
- Vegetable oil (for frying)
- 16 oz pitted green olives
Instructions
- Carefully fill each olive with pimento cheese using a small spoon or piping bag. Pack it generously.
- Set up your breading station: In one bowl, place flour seasoned with salt and pepper. In another bowl, beat the eggs. In a third bowl, add seasoned breadcrumbs.
- Bread the olives: Roll each stuffed olive in flour. Dip into beaten eggs. Coat thoroughly with breadcrumbs.
- Heat about an inch of vegetable oil in a large skillet over medium-high heat until shimmering (around 350°F).
- Carefully drop the breaded olives into the hot oil using tongs. Fry in batches for about 3-4 minutes until golden brown.
- Transfer to paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
