Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, crushed
  • 1/4 teaspoon saffron threads
  • 1 cup full-fat Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt (for sauce)
  • 2 tablespoons fresh lemon juice (for sauce)
  • 1 tablespoon honey (for sauce)

Instructions

  1. In a bowl, combine Greek yogurt, crushed garlic, saffron soaked in warm water, lemon juice, honey, olive oil, salt, and pepper. Mix until smooth.
  2. Add chicken breasts to the marinade and let soak for at least one hour.
  3. Preheat your grill to medium-high heat (400°F / 200°C) or prepare your oven by lining a baking sheet with foil.
  4. If grilling, place marinated chicken on the grill and cook each side for about 6-7 minutes until cooked through. If baking, place on the prepared baking sheet and bake for approximately 25-30 minutes.
  5. While the chicken is cooking, whisk together Greek yogurt, lemon juice, and honey in a bowl for the sauce.
  6. Once the chicken reaches an internal temperature of 165°F (75°C), remove it from heat and let rest for 5 minutes.
  7. Slice into strips and drizzle with yogurt sauce before serving.
