Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, combine rolled oats, flour, baking soda, and salt. Stir until evenly mixed.
  3. In another bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy (about three minutes).
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet mixture until just combined. Gently fold in the chopped pecans.
  6. Drop rounded balls of dough onto prepared baking sheets about two inches apart.
  7. Bake for 10-12 minutes or until golden brown around the edges but still soft in the center. Allow cookies to cool slightly before transferring them to a plate.
