Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, combine rolled oats, flour, baking soda, and salt. Stir until evenly mixed.
- In another bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy (about three minutes).
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredient mixture to the wet mixture until just combined. Gently fold in the chopped pecans.
- Drop rounded balls of dough onto prepared baking sheets about two inches apart.
- Bake for 10-12 minutes or until golden brown around the edges but still soft in the center. Allow cookies to cool slightly before transferring them to a plate.
