  • 2 tsp pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda

  • 1 cup chopped pecans
  • 3/4 cup light corn syrup
  • 3/4 cup light brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until fluffy. Add the egg and vanilla extract, mixing until well combined.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  4. Scoop tablespoon-sized portions of dough into each muffin cup and press to form small bowls.
  5. In a separate bowl, mix together the corn syrup, brown sugar, and chopped pecans.
  6. Pour the filling into each cookie cup until nearly full.
  7. Bake for about 15-18 minutes or until golden brown around the edges but still slightly soft in the center. Allow them to cool in the pan before gently removing.
