Ingredients

  • 1 cup black-eyed peas (dried or canned)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 6 cups low-sodium chicken broth
  • 1 tsp paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. If using dried black-eyed peas, rinse them thoroughly and soak overnight. If using canned peas, drain and rinse.
  2. In a large pot over medium heat, add olive oil. Sauté the onion, bell pepper, carrots, and celery until soft (about 5 minutes).
  3. Stir in minced garlic along with paprika, bay leaves, salt, and pepper. Cook for another minute until fragrant.
  4. Pour in chicken broth and add the black-eyed peas. Stir well to combine all ingredients.
  5. Bring to a boil then reduce heat to low. Cover and simmer for about an hour until the peas are tender.
  6. Remove bay leaves before serving. Garnish with fresh herbs if desired.
