- 1 cup black-eyed peas (dried or canned)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, diced
- 2 stalks celery, chopped
- 6 cups low-sodium chicken broth
- 1 tsp paprika
- 2 bay leaves
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- If using dried black-eyed peas, rinse them thoroughly and soak overnight. If using canned peas, drain and rinse.
- In a large pot over medium heat, add olive oil. Sauté the onion, bell pepper, carrots, and celery until soft (about 5 minutes).
- Stir in minced garlic along with paprika, bay leaves, salt, and pepper. Cook for another minute until fragrant.
- Pour in chicken broth and add the black-eyed peas. Stir well to combine all ingredients.
- Bring to a boil then reduce heat to low. Cover and simmer for about an hour until the peas are tender.
- Remove bay leaves before serving. Garnish with fresh herbs if desired.
